We'll regularly update this page with new advice and ideas emailed in by you.

Here are some great recipes I have used as a divorced dad to show my kids how daddy can cook and to ensure they eat healthy meals. For dads not used to cooking they are easy to follow and you'll set a good example to your children plus don't forget involve the kids in the cooking process. Also don't forget to remember the food pyramid - a child that eats healthy food is a happy and healthy child



LUNCH AND DINNER RECIPES

DADDY MADE IT Risotto
1 vegetable stock cube
1 cup water
1 carrot grated
2 tablespoons of broccoli heads grated
½ courgette – grated
½ cup mashed peas
1 ½ cups easy cook rice
4 rashers bacon
1 cup thinly chopped chicken pieces
2 tablespoons butter
½ cup cheese

1. Chopped chicken and bacon into tiny pieces and fry off until brown in a fry pan
2. Place 1 cup of water on to boil and add stock cube
3. One water is boiling add rice and vegetables and meat
4. Turn on to low and cover with saucepan lid. Slowly cook for 30-4o minutes, Check every 5 minutes as you may have to add extra water
5. once cooked mix into a bowl risotto butter and cheese
6. Serve

Note: you can add any type of meat or remove meat for vegetarians


Kids Curry
1 chipped onion
1 grated carrot or chopped if your kids like carrot
2 tablespoons of broccoli heads grated or chopped
½ courgette – grated or chopped
½ cup peas
1/3 cup water
1 cup copped chicken
1 jar of mild korma or curry sauce
Rice
Oil for frying

1. heat pan and sauté onions
2. Add in chicken and brown
3. Add in vegetables and cook by adding in water until the veggies are tender
4. Add in curry sauce – ENSURE IT IS MILD.
5. Cook rice
6. Note: if curry is too hot to taste mix in some yoghurt and additional coconut milk to cool it down.

DADDY DID IT Fish Pie
300 g (13 oz) potatoes, peeled and diced
11/2 tbsp milk
1 tablespoon of butter
1/4 onion, peeled and finely chopped
1 ripe tomato, skinned, de-seeded and chopped
1 tbsp flour
125 g cod fillet, skinned and cubed
125gsalmon fillet, skinned and cubed
1 tsp chopped fresh parsley
100 ml (31/2 fl oz) milk
2 tablespoons of grated cheese
Bring a pan of lightly salted water to the boil, add the potatoes, reduce to a simmer and cook until tender (about 20 minutes). Drain the potatoes and mash together with the milk and butter until smooth and season to taste.

Melt the butter in a saucepan; add the onion and tomato and sauté until softened. Add the flour and cook for 30 seconds, stirring. Add the fish to the onion and tomato together with the parsley. Pour over the milk and season to taste. Simmer for about 4 minutes until the fish is cooked through. Stir in the cheese until melted.

Put mixture into a dish top with the he mashed potato. Heat through sprinkle top with some more grated cheese and put under grill until cheese is melted
Serve

You can decorate the top of the pie with 2 peas to make eyes, some grated carrot to make whiskers and some more carrot or other vegetables to make a mouth

DADDY’S Tuna bake

3 cups of shell or corkscrew pasta
½ cup grated broccoli
¼ cup grated carrot
½ cup corn kernels
1 tablespoon butter
1 tablespoon plain flour
1 cup of milk
½ cup of grate cheese
1 cup of canned tuna


1. Preheat oven to 400 degrees F. In large saucepot, cook pasta in boiling salted water
2. Meanwhile melt butter in saucepan over low heat. Stir in flour, salt, and pepper until blended and cook, stirring, 1 minute. Gradually stir in milk; increase heat to medium-high and cook, stirring occasionally, until mixture thickens and boils. Boil 1 minute, stirring frequently. Remove saucepan from heat and stir in cheese until blended.
3. Add cheese sauce and tuna to pasta and mix in broccoli and other vegetables in saucepot; toss until evenly mixed. Transfer mixture to shallow casserole. Sprinkle with more cheese and bake for 20 minutes
4. Serve

My Daddy’s Stir Fry

1 cup chopped chicken or pork or beef
½ chopped onion
1 carrot chopped
2 florets broccoli chopped
2 tablespoons of corn or peas
½ cup of Chinese greens
½ cup chopped mushrooms
1 packet of Chinese noodles
½ cup chicken or vegetable stock
Soy sauce

1. Heat stir fry dish and add in some oil and meat and cook it
2. Place all vegetables into a microwave dish and add in some chicken or vegetable stock and cook for 3 minutes until tender.
3. drain veggies and add to meat
4. Add in remaining chicken or vegetable
5. mix vegetables and meat and add in 1 tablespoon of soy cause
6. Mix in ready to cook Chinese noodles
7. Stir and serve

NOTE: You’ll know which veggies to include and which not to when it comes to your kids. Start by trying just the meat and Chinese noodles and one vegetable and gradually add new vegetables each time you serve dish.


HOME MADE DADDY SUPER SPAG BOL

1 cup lean mince beef
½ chopped onion
1can of crushed tomatoes
½ cup cooked carrot
1/3 cup cooked mushrooms
½ cup cooked courgette
½ cup cooked broccoli
2 tablespoon tomato paste
1/3 teaspoon of garlic
Oil for cooking
Spaghetti

1. Heat pan with oil and brown mince and add in garlic and onion
2. Cooked vegetables and puree in blender, add in can of crushed tomatoes, blend till it’s sauce like
3. Add to mince and add in additional tomato paste
4. Cook spaghetti
5. Serve

NOTE: THE MORE VEGGIES YOU CAN PUREE THE BETTER FOR THE KIDS
Make the puree very smooth
Also puree some of the cooked spaghetti so it’s in small pieces and toddlers can spoon it into their mouth and then add in long pieces of spaghetti they can suck up.

KIDS PIZZA

Pita bread or pizza base from supermarket
1 cup of spaghetti sauce from spag bol recipe
1 cup of chopped ham or cooked ham
1 cup of chopped mixed veggies – kids’ choice
1 cup grated cheese

1. Turn on grill
2. Spread sauce onto pita bread
3. Allow kids to decorate pizza with favorite meats and cheese and vegetables
4. Cook under grill
5. Serve


DADDY and KIDS SHEPHERDS PIE

2 cups of lean mince meat
½ chopped onion
1 cup of spag bol sauce
3 cups of chopped potatoes
3 tablespoons butter
2/3 cup cheese
Oil for cooking

1. Heat pan and cook mince with onion
2. add in spag bol sauce
3. If your kids Luke some chunky vegetables add in some actual un pureed vegetables
4. Place mixed mince and sauce into casserole dish
5. Boil potatoes
6. Mash potatoes add in butter and half cheese
7. Place mashed potato on mince
8. Sprinkle rest of cheese on top
9. Cook on medium heat for 15 minutes
10. Serve


DADDY’S SPECIAL SPAG BOL SAUCE – WITH ADDED VEGETABLES
(Or how to get the kids to eat their greens without them knowing it)

3 cups of your favourite cooked tomato based pasta sauce
Or
1 and half cups of chopped tomatoes
4 tablespoons tomato puree
1 small chopped onion
½ clove of garlic
2 tablespoons of oil
1 ½ cups of boiled vegetables – carrot, broccoli, courgette, peas, spinach and pumpkin or combination there off. (Make sure they are very well cooked. Cooked them in boiling water with ½ vegetable stock cube)

1. Cook vegetables in water with ½ stock cube
2. Heat fry pan and slow fry onions with garlic.
3. Once onion is cooked through mix in pre-made pasta sauce and stir until cooked through.
4. If you are using chopped tomatoes cook in chopped tomatoes and add tomato puree to taste.
5. Put cooked vegetables into blender and blend until fine sauce, you may want to keep some of the boiled water – it contains a range of nutrients from vegetables and you can loosen blended vegetable mixture with it. The op tip is ensure the vegetables are very well blended
6. Add sauce mix from pan into the blender and thoroughly blend.
7. You should then have a red sauce made up of a whole range of vegetables your child would not normally eat.
8. Add to the sauce minced meat and cook through and add to spaghetti for a serving of wiggly worms.
9. Add to children and other pasta types for a tomato based pasta
10. Use as a nutritious base for pizzas
